Step 1
Preheat oven to 400°, quarter vegetables, remove outer layer of garlic bulb, wrap completely in foil. Place vegetables and garlic on a baking sheet and drizzle olive oil. Season with seasonings. I measure with my heart but generally use minimal salt, 1/2 t pepper, and 1 t basil and thyme. I just had ground seasonings. Bake for 20 min. Unwrap garlic carefully and remove cloves. Toss everything in a blender and puree. You can thin with water or stock. Topped it with a dash of parmesan cheese for pizzazz.
