Pat the filet mignon dry and season generously with salt and pepper on all sides.

Heat a pan over medium-high heat with a little oil or butter. Sear the steaks until deeply browned on the first side, then flip and cook to your preferred doneness.

Remove steaks from the pan and let them rest.
