Instructions
Step 1
Select the SAUTÉ setting and heat the olive oil in the pressure cooker.
Step 2
Add had of the scallions and all of the ginger and cook until softened, about 4 minutes.
Step 3
Add the beef stock, soy sauce, and chicken.
Step 4
Secure the lid and cook on MANUAL with high pressure for 8 minutes.
Step 5
Use quick release and remove the lid.
Step 6
Select the SAUTÉ setting and bring the stock to a simmer.
Step 7
Add the noodles and allow to simmer until cooked through, about 5 minutes.
Step 8
Transfer to four bowls and top each with an egg and more scallions.
