thin matchsticks
1 tspfresh ginger
cut into thin matchsticks
½ tspblack peppercorns
½ tspcoriander seeds

Instructions
Step 1
Pack carrot and apple tightly into jar.
Step 2
Tuck ginger through the layers.
Step 3
Add peppercorns and coriander seeds.
Step 4
Heat brine just until salt dissolves (do not boil hard).
Step 5
Pour over veg until fully submerged.
Step 6
Cool uncovered 20–30 mins, seal, refrigerate.
Step 7
Ready: 12–24 hrs
