Instructions

Step 1
Melt butter in a saucepan over medium heat. Add the diced onion and cook until translucent (about 5 minutes).

Stir in the flour to create a roux. Cook for 3-4 minutes to remove the raw flour taste.

Season the roux with nutmeg, black pepper, and cayenne.

Turn off the heat and whisk in the cold milk all at once until smooth. Turn the heat back to medium-high and cook, stirring constantly, until very thick (about 3-4 minutes).

Remove from heat, stir in salt, and let it cool slightly.

In a large bowl, combine the finely minced chicken, minced ham, and parsley.

Fold in the warm béchamel sauce until well combined. Taste and adjust seasoning.

Cover with plastic wrap and refrigerate for at least 2 to 3 hours (or until firm enough to handle).

Using a scoop or spoon, portion the chilled mixture into balls.

Coat the ball in flour and shape it into a smooth sphere. Dip into the beaten eggs. Roll thoroughly in breadcrumbs.

Heat oil to 350°F (175°C).

Fry the croquettes for about 4 minutes until golden brown and crispy.
