For the "breading"

Step 1
Preheat oven to 350°
Step 2
Pulse the pork rinds in a food processor until it becomes a fine breading.
Step 3
Combine the crushed pork rinds, parmesan, almond flour, garlic powder, paprika, black pepper, and salt in a large mixing bowl. Mix thoroughly so the almond flour distributes evenly through the pork rind crumbs.
Step 4
In a separate mixing bowl, whisk together three eggs.
Step 5
Pat pork chops completely dry before seasoning them with salt and pepper.
Step 6
Dip each chop into the egg mixture before pressing it firmly into the crust mixture. Let the coated chops rest 5 minutes so the coating adheres.
Step 7
Heat oil or butter in a large oven-safe skillet over medium heat.
Step 8
Cook chops for 4–5 minutes first side and 3–4 minutes second side. If your skillet cannot fit all chops without crowding, cook in two batches. Do NOT overcrowd.
Step 9
Transfer the skillet to the oven and bake for 6-10 minutes or until internal temperature reaches 145 F.
Step 10
Let chops rest 3-4 minutes before serving.
