Sugar Free Irish Apple Crumble

I needed a dessert to take to a St Patrick's Day party but I needed it to be sugar-free and a little bit healthy.

Instructions

Step 1
Pre-heat and prep: heat oven to 350F and grease and 8x8 baking dish.
Step 2
In a large bowl, toss the sliced apples with the allulose, lemon juice, and spices. Let them sit 5 min while you make the topping.
Step 3
In a seperate bowl, combine oat, almond flour, and Truvia Brown. Add the cold butter cubes. Use your fingers or a fork to rub the butter into the dry ingredients until it looks like clumpy wet sand.
Step 4
Pour the apple mixture and all liquid into your baking dish and spread the crumble topping evenly over the top.
Step 5
Place in the oven for 35-45 min. Watch closely. Allulose and truvia brown faster than regular sugar. If the crumble gets dark brown before the 30 min mark, lightly lay a piece of foil over the top. Its done when the fruit juices are bubbling up around the edges and the apples feel tender when poked. Let it rest at least 10 min before serving to allow it to thicken.

Optional Festive Touches

Green whipped Cream: whip heavy cream with a bit of allulose and drop of peppermint extract and green food coloring. Whiskey Spike: add 1 tbsp of Irish whiskey to the apple mix before baking for an authentic kick. The alcohol burns off but the flavor remains. You can also garnish the top with some fresh mint leaves and or a dusting of cinnamon or crushed pistachios in the shape of a shamrock. Simply cut out a stencil in the shape of a shamrock and shake toppings inside the stencil. Edible moss topping: take unsweetened shredded coconut and toss it in a bowl with a little green food coloring and a bit of water. Sprinkle this on after baking for some green and some extra crunch.
