Step 1
Preheat oven to 350°F. Line 2 baking sheets with parchment paper. In the bowl of an electric mixer fitted with the the paddle attachment, beat together oil and sugars. Add almond flour, pudding, eggs, vanilla, baking soda, potato starch, and salt. Mix well until a soft dough forms. Stir in chocolate chips. Shape dough into 1-inch balls (I use a small scoop); place on baking sheet, 4 across and 5 down. Bake on center rack for 10 minutes. Allow to cool for 10 minutes before transferring to a cooling rack. Store in an airtight container or bag Enjoy!
