Omolette Sandwich

In case you're looking for a healthier version of a Omolette Sandwich, yet still full of flavour 😌
It has no salt, and we use flatbread instead of two slices of bread.

Instructions
Step 1
Crack the egg into a small bowl (yolk and whites) and whisk everything together.
You can use a whisk if you wish, but when I'm cooking for myself, I only use one egg, so it's easier to use a small fork (and it's easier to clean it afterwards too!)
Step 2
Pour the scrambled egg mixture into a non-stick frying pan. If you don’t have a non-stick frying pan, grease it with a drizzle of olive oil before pouring the contents of the bowl into the pan.
For smaller doses, use smaller frying pans.
Step 3
Let the egg mixture form a circular base. The edges of the base will start to set, but there may still be a little uncooked mixture in the centre – that’s fine.
Loosen the edges of the base from the frying pan using a spatula (or a spoon, or anything else that does the job without tearing the base or the edges apart).
As you loosen the edges, start to loosen the base as well. Once you can slide the spatula under the base and lift it completely away from the pan, flip it over. If there is still some uncooked mixture in the middle of your base before you flip it, take extra care with this step to prevent the mixture from spurting out of the pan.
Let the new side cook until you get your omelette.
Step 4
While the other side of the omelette is cooking, let’s assemble the rest of our sandwich.
Place the flatbread on a plate, and on one of its halves, add a lettuce leaf and dress it with the balsamic vinegar.
Step 5
When your omelette is ready, set it on top of the lettuce.
Add some parsley over the omelette, to give it extra flavour.
Close the flatbread.
