Ingredients
4 servings
1 heaped tbsptom yum paste
125gfrozen cooked peeled king prawns
jumbo shrimp
50gfine green beans
cut into 1cm/ 1/2in pieces
2spring onions
scallions, diagonally sliced
4mushrooms
peeled and thinly sliced
50gbrown rice udon noodles
dried
0.25red pepper
pepper, deseeded and thinly sliced
freshly ground black pepper
Instructions
Step 1
Put the kettle on and pour 500ml boiling water into a saucepan. Add the tom yum paste and stir for a few seconds until it dissolves.
Step 2
Add the prawns, green beans, spring onions/, mushrooms, noodles and bell pepper.
Step 3
Bring to the boill, then simmer for 10 minutes. Season with a little black pepper
