Instructions

Step 1
Add noodles when done or other veggies as desired.
Step 2
Cut all veggies as mentioned in ingredient list. Cut scallions greens off, chop up and set aside. Chop cilantro and set aside. Cut the scallions whites into 1 inch pieces.
Step 3
Over medium heat fry shrimp, scallions and ginger in olive oil until fragrant and slightly browned. Add garlic until fragrant.
Step 4
Pour in vegetable broth and add mushrooms.
Step 5
Bring to a boil and turn to a simmer for 10-15min.
Step 6
Add oyster sauce, mix and turn off. Salt and pepper to taste.
Step 7
Serve hot with cilantro and scallion greens.
