Instructions

Step 1
Preheat oven to 400 degrees
Step 2
In a medium bowl, toss the halved Brussels sprouts in olive oil and season.

Grease a 9x13 baking pan
Step 4
Add Brussels sprouts and bacon to pan and roast for 12-15 minutes. Take pan out of oven and stir around. Create 4 wells for eggs to cook.
Step 5
Crack eggs into wells and season. Sprinkle Parmesan over the top.
Step 6
Cook in the oven for 8 more minutes or until eggs are cooked to preference, and serve.
