Step 1
Preheat oven to 375⁰.
Grease a muffin tin with olive oil.
Sautee the veggies.
Put one slice of ham in each section, then add in veggies topping with cheese. Crack one egg into each section.
Step 2
Season eggs with salt and pepper.
Bake in oven for 15 minutes, depending on how cooked you like your eggs.
Sprinkle with parsley and serve!
