Instructions
Step 1
Pressure cook 1 lbs frozen chicken in InstantPot.
Step 2
Boil 1 cup wild rice on stovetop according to package instructions (about 45 minutes).
Step 3
Microwave-steam the bag of edamame beans. When cooled, remove the beans from their pods and set aside.
Step 4
Chop sugar snap peas into small slices.
Step 5
Wash and quarter 1/2 of cucumber.
Step 6
Chop an avocado.
Step 7
When chicken is done, drain the water, and add all the seasonings (whatever amount feels right, lol) and saute. Then add juice of 1 lemon.
Step 8
Combine all the greens and dressing in large bowl.
Step 9
To serve, combine individual portions of rice, chicken, and salad. Enjoy!
