Instructions

Step 1
Prepare the pasta dough by mixing flour and egg, then divide it into two parts. Mix one part with blended beetroot to obtain a colored dough, keeping the other part plain. Knead both until smooth and let them rest.
Step 2
Mix the goat cheese with thyme, marjoram, sage, rosemary, salt, and pepper until creamy. Set aside a couple of spoonfuls for the sauce.
Step 3
Roll out both doughs thinly and shape the ravioli, filling them with the goat cheese mixture and sealing well.
Step 4
Boil the ravioli in salted water until they float, then drain gently.
Step 5
In a pan, melt the butter on low heat and add the reserved filling, stirring until it becomes a smooth sauce. Add the ravioli and toss gently to coat.
