Step 1
Melt the butter and let it cool.

Take a bowl and put the breadcrumbs, saffron and grated parmesan in it. Mix with a spatula for few seconds.

Pour the melted butter and mix. When is absorbed add the egg and mix with a spatula. Keep mixing until the liquids are absorbed

Take your dough and move it to a flat wooden surface and work in it for a for a minute with your hands. Once you are done, let the gnocchi rest for at least half an hour.
Step 5
Use a large pot to warm up some salty water. When the water is boiling, ease down the gnocchi and let them boil until they come up to the surface of the water. It can take more or less 5 minutes. When ready, remove the gnocchi from the pot and strain them.
