Instructions
Step 1
1. Slice the guanciale into thin slices as shown in the video and fry until nice and crispy, then set aside.
Step 2
2. In a bowl, mix egg yolks with grated cheese, pepper and 1 tablespoon of the greasy juices of your guanciale.
Step 3
3. In the meantime, boil your pasta in some salted water until al dente
Step 4
4. Add your boiled spaghetti in the greasy pan and toss well over the heat to combine all the flavours together.
Step 5
5. Turn the heat off then add your egg and cheese cream along with some pasta water.
Step 6
6. Mix everything together until everything is well combined and creamy
Step 7
7. Add the crispy guanciale on top and enjoy
