250gSpanish Rice
250gextra lean beef mince
5% fat or lower
200gmushrooms
finely chopped
1onion
medium, finely chopped
2cloves garlic
minced
400gtin chopped tomatoes
1 Tbsptomato paste
Spices
Instructions
Cook Base
Step 1
Spray pan
Step 2
Cook onion + garlic until soft
Step 3
Add mushrooms. Cook until water evaporates and they brown slightly.
Cook Mince
Step 4
Add 250 g mince
Step 5
Break up well and brown
Build Sauce
Step 6
Add spices + tomato paste → cook 1–2 mins
Step 7
Add chopped tomatoes
Step 8
Simmer 10–15 mins until thick
Rice
Step 9
Heat 250 g pack
Step 10
Divide into 3 portions (~83 g each)
Assemble
Step 11
Divide mince mixture into 3
Step 12
Serve over rice
