Instructions
Step 1
Crush the shortbread and melt the butter. Mix both together.
Step 2
Add the cream, soft cheese and icing sugar and caramel to a large bowl and whisk. (Taste to check if any more caramel is needed)
Step 3
Add the biscuit mix to your preferred container(s) (can make many little cheesecakes or one big one) and press firmly.
Step 4
Spoon in the cream mix on top of the base and smooth out
Step 5
Top your cheesecake(s) with your preferred toppings. (Eg: drizzle of chocolate or caramel, chocolate pieces or biscuit balls, etc)
Step 6
Leave in the fridge for a while or overnight
