Smoked Pork Carnitas

Smoked pork loin roasts. Used the ends from the large loin I bought from Costco after cutting out the chop. Chop up into small pieces and serve with pickled onions, smoked jalapenos, street corn, and tomatoes.

Ingredients
8 servings
Marinade
2 tablespoonsoil
1 tablespooncoarse kosher salt
2limes
sliced in half and juiced
1orange
small, sliced in half and juiced
Rub
Instructions
Step 1
Mix all ingredients for marinade in a ziploc bag
Step 2
Add pork and place in fridge to marinate for 4+ hours or overnight
Step 3
Remove pork from fridge, place on a sheet, and towel dry.
Step 4
Mix together seasoning for run, and liberally apply to all surfaces of the pork, making sure to rub in where before turning
Step 5
Preheat smoker to 180F
Step 6
Once smoker reaches 180F, put in pork with fat cap facing upwards
Step 7
Cook for ~1.5 hours, or until pork reaches ~110F
Step 8
Increase temperature to 225F and continue smoking until internal temperature reaches 145F, about 1 hour
Step 9
Remove pork from smoker, cover and rest for 10-15 minutes
Step 10
Slice and cube into small pieces
Step 11
Serve with soft shell tacos, pickled onions, street corn, smoked jalapenos, and any other taco style toppings of your choosing
