Instructions

Step 1
Place the dried kidney beans in a pressure cooker or Instant Pot and cover with water, making sure there are about 2 inches of water above the beans (about 10 cups).
Step 2
Soak the beans overnight without draining the water.
Step 3
The next day, seal the pressure cooker or Instant Pot and cook on HIGH pressure for 20 minutes. Allow the pressure to release naturally.
Step 4
While the beans cook, heat the olive oil in a large skillet over medium-low heat. Add the garlic, tomato paste, cilantro, onion, cubanelle pepper, and bouillon cubes. Sauté for about 10 minutes, stirring often.
Step 5
Once the pressure has released, transfer about 25% of the beans and cooking liquid to a blender. Blend until smooth, then return the mixture to the pot.
Step 6
Stir in the adobo seasoning and salt to taste.
Step 7
Add the sautéed vegetable mixture to the beans and bring to a boil using medium heat or the SAUTE function on the Instant Pot.
Step 8
Simmer uncovered over medium-low heat for about 30 minutes, stirring often, until the beans become creamy and the liquid reduces slightly. Serve warm over rice.
