Ingredients

2 linksChorizo sausage
or 1 cup chorizo sausage broken down while cooking
2 cupsbaby spinach
⅛ cupgreen pepper
diced
⅛ cupred pepper
diced
⅛ cupyellow onion
cut into small pieces
10cherry tomatoes
cut in halves
½ cupfeta cheese
½ cupParmesan
grated Fresh
6Fresh Basil Leaves
good sized, cut into lengthy strips
4eggs
3 Tbspwater
scrambled
Oregano
2 sprigs added to pan with chorizo
Fresh Thyme
2 sprigs added to pan with chorizo
Instructions
Step 1
First turn on the broiler to finish off your Frittata at the end. Next cut sausage links into small pieces removing casing or just cook the sausage as if scrambling it to break down the meat into small pieces when cooking. Add both Oregano and Thyme to the pan for Aromatics .When the meat is about 7mins away from being done add red & green peppers, onion and cook for 2 mins . Then add tomatoes and chopped baby spinach and cook for about 1 min or until spinach wilts. Sprinkle Feta cheese over the top ,then add the scrambled egg mixture assuring the egg covers the entire pan. Place the pan under the broiler long enough for the frittata to brown and the eggs to rise to a fluffy cloud. Remove and let stand about 5 mins. Top with Fresh Basil and grated Parmesan.
