Ingredients

8slices sourdough bread
2 Tbspolive oil
2 clovesgarlic
1 whole, 1 finely chopped
¼ cupgrated parmesan cheese
1 ozpepperoni
halved
1 x 15 ozcan Cannellini beans
rinsed
1 cupmarinara sauce
jarred
1 TbsPepperoncini brine
¼ cupfresh basil leaves
chopped
2 Tbspflat leaf parsley
chopped
½ cupwhole milk mozzarella
coarsely shredded
4Pepperoncini
medium, thinly sliced
Instructions
Step 1
heat broiler. Brush eight slices sourdough bread both sides with one teaspoon olive oil. Place on baking sheet broil until golden brown for one to two minutes per side. Rub with one clove garlic sprinkle with 1/4 cup grated Parmesan.
Step 2
heat 1 tbsp oil in medium Skillet on medium heat. Add sliced pepperoni halves cooked until beginning to crisp 45 to 60 seconds per side. Transfer to plate leaving oil and skillet. Stir in chopped garlic and can of rinsed beans cook 1 minute add cup jarred marinara sauce cook 2 minutes remove from heat add one tablespoon Pepperoncini brine. Fold in basil and parsley leaves.
Step 3
Top toast with Bean mixture add pepperoni and mozzarella broil until cheese melts one to two minutes. Sprinkle with Pepperoncini and graded parmesan cheese and chopped basil if desired.
