Instructions

Step 1
Add to a very large mixer bowl in order given. First flour, then starter, then oil, then salt, then starch, then soda.

Sourdough starterSourdough starter4 ½ cups

saltsalt¼ cup
starchstarch1 cup
baking sodabaking soda1 Tbsp
Step 2
As the mixer is stirring, add the warm to hot water gradually. You may need more or less water depending upon the protein content of your flour.

Step 3
Continue mixing for 10 minutes or more until smooth and stretchy.
Step 4
In the American Southwest, cover with a damp cloth or plastic wrap. Let rest and raise 3 hours or more until raised. It may not raise double (my friends doesn't, but mine does).
Step 5
Punch it down. Take 2.5 oz. And form onto a tortilla. If using a rolling pin, begin from the center and roll to the edge. Repeat. In the American Southwest, be sure to keep the dough you are not working with covered by a damp cloth.
