Instructions

Step 1
Preheat oven 400f
Step 2
Place squash +onion on baking sheet in single layer. With Squash flesh side up, drizzle oil over both. Sprinkle salt, paprika, chili flakes, nutmeg. place squash flesh side down roast 20-25 mins
Step 3
After cooking carefully scoop the squash out of the peel. You may need to let it cool a little.
Step 4
Add half the veggies and all the milk to a blender and blend til creamy.add the remaining veggies and blend again
Step 5
Add butter to larga pan and melt on medium heat. whisk flour until absorbed and no raw flour smell
Step 6
Add puree squash to pan cook 2 mins stir often. Remove from heat and and stir in vinegar.
