Ingredients

1 cupall purpose flour
1 ½ tablespoonsgarlic salt
1 teaspoonground black pepper
1 teaspoondried basil
½ teaspoonitalian seasoning
½ teaspoondried oregano
4boneless skinless chicken breasts
7 tablespoonsextra-virgin olive oil
divided
1red bell pepper
cut into thin strips or chopped
1 tablespoongarlic
finely minced
2 ½ tablespoonscornstarch
divided
½ cuplow-sodium chicken broth
½ cupheavy cream
6 ouncesfresh spinach
1 cupmilk
1 cupparmesan cheese
freshly grated
1 packagefettuccine noodles
Instructions
Step 1
Preheat oven to 350 degrees.
Step 2
Combine flour, garlic salt, pepper, basil, Italian seasoning, and oregano in a shallow bowl.
Step 3
Dip each chicken breast in the flour mixture and coat well.
Step 4
In a large skillet, heat 5 tablespoons of oil until hot.
Step 5
Place the breaded chicken in the oil until each side is golden. Don't cook all the way through, it will finish cooking in the oven.
Step 6
Line a banking sheet with aluminum foil and spray with cooking spray.
Step 7
Place the chicken breasts on the cookie sheet and bake for 15 minutes, until cooked through. Set aside until ready to use.
Step 8
While the chicken is baking, prepare the noodles as directed on the package.
Step 9
Wipe the skillet with some paper towels and add the remaining 2 tablespoons of olive oil.
Step 10
Cook the diced red pepper and garlic for about 3 minutes.
Step 11
Stir in 1 tablespoon of cornstarch and stir constantly for one minute.
Step 12
Add the chicken broth and bring to a light simmer while whisking constantly until it is starting to thicken, about 3 to 4 minuntes.
Step 13
In a separate small bowl, whisk together the heavy cream and the rest of the cornstarch.
Step 14
Add the spinach, cream, and milk to the skillet.
Step 15
Bring this to a simmer and continue to cook until spinach starts to soften and go a dark-green color.
Step 16
Stir in the cheese.
Step 17
Top the noodles with the breaded chicken and spoon the sauce on top.
