These Brazilian-style potato croquettes combine a smooth, seasoned mashed potato dough with savory, finely grated Calabresa sausage and a rich center of melted mozzarella cheese. Coated in crisp breadcrumbs and fried or air-fried until golden, they make an excellent appetizer or snack.

Instructions
Step 1
In a bowl, add the boiled potatoes and mash them well.
Next, add the Parmesan cheese, grated calabresa sausage, cornstarch, parsley, and chives. Mix everything together very well.
Take a small portion of the dough, flatten it open, and add a piece of mozzarella cheese.
Close the dough and roll it into a croquette shape.
Repeat this process until all the dough is used.
In a separate bowl, add the egg and milk, and mix well.
Dip the croquettes into the egg mixture, and then coat them thoroughly in the breadcrumbs.
Fry in hot oil until golden brown, or cook in an air fryer at 350°F (180°C) for approximately 10 minutes.
