Step 1
Toast: Turn oven broiler to HIGH. Line a baking sheet with parchment paper. Arrange marshmallows in a single layer. Broil for 1 to 2 minutes until deeply browned and charred. Flip and brown the other side for 30 seconds. Watch closely!
Step 2
Dissolve: In a saucepan over medium heat, combine water and sugar. Stir until the sugar dissolves completely.
Step 3
Melt: Drop the hot, toasted marshmallows into the simmering sugar water. Turn heat to low. Whisk continuously for 3 to 5 minutes until the marshmallows melt completely into the liquid.
Step 4
Finish: Remove from heat. Stir in the vanilla extract. Let cool for 10 minutes.
Step 5
Strain: Pour the syrup through a fine-mesh strainer into a clean glass jar to remove any un-melted marshmallow skins.
