Instructions

Step 1
Preheat skillet: Place cast iron skillet in oven at 425°F while mixing batter.
Step 2
Mix dry ingredients: Combine cornmeal, flour, baking powder, sugar, and salt in a bowl.
Step 3
Add wet ingredients: Stir in melted butter and warm milk until just combined (lumpy batter is fine).
Step 4
Cook in skillet: Swirl hot skillet with 1 tbsp butter, pour batter, and bake 12–15 minutes until golden.
Step 5
Serve: Enjoy warm with honey or butter.
