330gall purpose flour
10ginstant yeast
4 tspsugar
1 tspsalt
300mlwhole milk
3 Tbspbutter
melted
1egg
cornmeal
for dusting

500gpork mince
2 tspsmoked paprika
1 tspgarlic powder
1 tspprovence herbs
½ tspcayenne powder
½ tspsalt
1 tspblack pepper

Instructions
Step 1
Warm the milk to 43c/ 110f and add the sugar and yeast. Stir well, cover and leave to the side for 10 minutes.
Step 2
Add the flour and salt to a bowl and mix.
Step 3
Pour in the yeasty milk and begin stirring (you can use a stand mixer if you have one).
Step 4
Once the dough has come together, add the egg and the melted butter (make sure the butter isn't boiling hot. Once you have melted it, leave to cool for a minute or two).
Step 5
Stir for 5 - 7 minutes.
Step 6
On a well floured board, add the dough. It will be wet so add lots of flour as you bring it together.
Step 7
Fold over itself 10 - 12 times and then shape into an oval shape.

Place in a bowl, cover and leave to rise at room temperature for 1hr 30 minutes).
Step 9
Once the dough has risen, press the air out and place back on your board. Carefully spread the dough out to a 1/2 inch thick.
Step 10
Using a floured ring cutter, cut out the muffin shapes. Reshape the dough and repeat until you have used all of it.
Step 11
Add some cornmeal on top of baking paper in a tray and place the muffins on top. Sprinkle more cornmeal on top, cover and leave for 10 minutes.
Step 12
Using a non stick pan (or cast iron) on a medium - low heat, add the muffins and cover for 4 - 6 minutes. Once golden brown on the bottom, flip and leave uncovered for 3 - 4 minutes. Repeat until all muffins are cooked.
Step 13
If you're unsure your muffins are cooked all the way through you can place them in the oven at 180c/350f for 3 - 5 minutes. Leave on a wire rack to cool.
Step 14
In bowl add the pork mince and seasonings. Combine well and using the same ring cutter shape out the patties.
Step 15
Cook on a medium - high heat and flip when well seared. Add the cheese on one patty on place the other patty on top. Flip and remove when cooked through.
Step 16
Finally, crack an egg into the ring cutter in the same pan to maintain size and shape.
Step 17
Splash a little water in the pan and cover to allow the egg to cook.
Step 18
Slice the muffins (toast a little if your preference) and assemble the muffin.
Step 19
Crack a little black pepper on top of the egg and enjoy!
