Instructions
Step 1
Preheat oven to 350 F.
Step 2
Grease muffin tin.
Step 3
Mix together flour, flaxseed meal, oat bran brown sugar, baking soda baking powder, salt and cinnamon in a large bowl.
Step 4
Stir in carrots, apples, raisins and nuts.
Step 5
Combine milk, beaten eggs and vanilla in a small bowl, then add to dry ingredients.
Step 6
Stir until ingredients are moistened. Do not over mix.
Step 7
Film muffin tins, 3/4 full.
Step 8
Bake for 15 to 20 minutes.
