Cheesy, Spicy Gnocchi w/ Greens & Beans

5 steps
Prep:20minCook:10min
Inspired by a midnight snack I made for Chrissy Teigen when we were working together on one of her cookbooks, this recipe brings a full meal together in one colorful, cheesy skillet. The store-bought gnocchi gives this bake big main-course energy. The beans add protein, the greens contribute silky, earthy virtue, and the cheese makes it downright sinful.

Instructions

Step 1
1. Arrange a rack in the top third of the oven; preheat to 400°F.
Step 2
2. Cook the gnocchi according to the package directions. Drain well, then transfer to a bowl and toss with 1 tablespoon of the olive oil to prevent sticking.
Step 3
3. Heat the remaining 3 tablespoons olive oil in a large (12-inch) ovenproof skillet over medium-high heat. Add the onions to the skillet and cook, stirring often, until they begin to soften, 6 to 7 minutes.
Step 4
Working in three batches, add the greens with 1 to 2 tablespoons broth each time, stirring, until they are wilted but not completely shrunken, 3 to 4 minutes total.
Step 5
4. Stir in the harissa, miso, remaining broth (about ½ cup), and salt, then stir in the beans, tomatoes, and feta. Stir in the gnocchi. Remove from the heat, sprinkle with the Cheddar, and bake until the cheese is melted and bubbly, 10 minutes. Raise the oven to broil and broil until lightly golden, 2 to 3 minutes. Remove from the oven and divide among bowls.
