Instructions
Step 1
Cut pork tenderloin into bite sized pieces and season with salt and pepper.
Step 2
Finely chop onion and garlic.
Step 3
Cut bell peppers into strips.
Step 4
Heat a little olive oil in a frying pan and add the pork. Fry until well browned on the outside, then remove from the pan onto a plate.
Step 5
In the same pan, fry the peppers, onion, and garlic until translucent. Add the pork back in.
Step 6
Stir in the sugar and tomato paste. Cook for another minute or two. Be careful that it doesn't burn!
Step 7
Pour in enough chicken broth to cover the meat.
Step 8
Further season with salt, pepper, and chili flakes and simmer until the pork is tender and the sauce has thickened a little.
Step 9
If the sauce is not thick enough, continue to thicken it with cornstarch mixed with cold water if needed and serve!
