Ingredients
4 servings
2chicken breasts
cut into large strips
1 cuporzo
2 cupschicken broth
1 tspchicken bouillon powder
¼ cupwhite wine
2Roma tomato
chopped
1bell pepper
sliced
0.5onion
sliced
1serrano pepper
thinly sliced
0.5habanero pepper
minced, adjust to heat preference
2 clovesgarlic
minced
1 Tbspbalsamic vinegar
1 Tbspolive oil
basil
salt
pepper
paprika
garlic powder
Instructions
Step 1
Heat olive oil in a large pan over medium-high heat.
Step 2
Season chicken with oregano, paprika, garlic powder, salt, and pepper.
Step 3
Sear until lightly browned (not fully cooked).
Step 4
Remove from pan and set aside.
Step 5
In the same pan, add onion, bell pepper, Serrano, and habanero.
Step 6
Cook 3–4 minutes until softened.
Step 7
Add garlic and cook 1 minute.
Step 8
Stir in chopped tomato and cook another 1–2 minutes.
Step 9
Pour in white wine and simmer 2–3 minutes, scraping up any browned bits.
Step 10
Stir in orzo, chicken broth, basil and bouillon powder.
Step 11
Add balsamic vinegar and mix well.
Step 12
Return chicken to the pan.
Step 13
Bring to a simmer and cook uncovered for ~12 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.
Step 14
Taste and adjust seasoning if needed.
Step 15
Add a splash of broth if too thick, or cook a bit longer if too liquidy.
