Instructions

Step 1
Blend cottage cheese, provolone, eggs, and egg whites
Step 2
Add egg mixture, spinach, tomatoes, onions, spinach and seasonings to a bowl and mix until well combined
Step 3
Divide mixture into mini muffin tins with an 1/8 cup. I used silicone baking pans for easier removal. This should make roughly 56 egg bites
Step 4
Bake at 350° for about 20 minutes, and let stand on the counter for about 10-15 minutes before removing them from the pan.
Step 5
Either serve, or refrigerate for up to a week. I chose to freeze mine and use them for meal prepping.
