Instructions
Step 1
Preheat the oven to 200°C. Quarter the baby new potatoes.
Step 2
Toss the potatoes with 2/5th of the oil and season. Arrange on one side of a large baking tray. Roast for 10 minutes.
Step 3
Meanwhile, halve the tomatoes and peel and bash the garlic. Toss both in a mixing bowl with 2/5ths of the oil and season.
Step 4
Tip the tomato-garlic mix onto the other side of the baking tray along with the chicken steaks. Roast for a further 12 minutes.
Step 5
Meanwhile, halve the broccoli stems lengthways and toss in the same mixing bowl as the tomatoes with the remaining oil. Season.
Step 6
Take the baking tray out of the oven. Turn the chicken steaks over, then roughly tear the mozzarella and arrange on top. Stir up the potatoes and add the broccoli to the tray.
Step 7
Return everything to the oven for a final 12 minutes, until the chicken is thoroughly cooked and no pink meat remains.
Step 8
Spoon the tomatoes and their juices over the chicken. Serve with the broccoli and potatoes, with basil leaves scattered on top.
