Instructions
Step 1
Whisk the eggs in a bowl with salt, pepper, and chili powder.
Step 2
Scramble the eggs in a pan over medium heat until just cooked, folding in the chopped spinach and black beans during the last minute.
Step 3
Lay out the 4 tortillas and evenly distribute the egg, bean, and spinach mixture across them.
Step 4
Top with grated cheese, fold in the sides, and roll tightly into burritos. Wrap each burrito individually in foil and freeze.
