Homemade Pineapple Ginger Juice

This pineapple ginger juice is sweet, fresh and has a nice warm kick from the ginger. It’s perfect for cooling down on a hot day. The sweet pineapple and spicy ginger go so well together, and a little squeeze of lemon makes it even tastier. It’s naturally sweet, so you don’t need to add any sugar, and it’s really good for you too. It’s full of vitamin C, helps with digestion, and gives your body a nice healthy boost. Use a ripe pineapple for the sweetest juice. If you like it really smooth, strain it twice. Have a taste before serving and change it to suit you. Add more water to make it lighter, a little honey if it’s not sweet enough, or more lemon if you want it sharper. Use less ginger if you want it mild, or more if you like it fiery. Serve it cold over lots of ice. It’s lovely with breakfast, nice with your meals to help digestion, and so refreshing when it’s hot outside. Keep any leftovers in a covered jug or bottle in the fridge and drink within 3 to 4 days. Give it a shake before pouring, as the juice settles at the bottom when it sits. You can also freeze it into ice cubes and blend them later for a slushy drink.

Instructions

Step 1
1. Get the pineapple ready. Cut off the top and bottom, slice off the skin, then cut it into 4 long pieces and cut out the hard middle part. Chop the rest into chunks, about 4 cups.

2. Peel the ginger. The easiest way is to scrape the skin off with a teaspoon. Then chop it roughly.

3. Put the pineapple, ginger, lemon juice and 2 cups of cold water into your blender. Blend for about 1 minute until smooth. If your blender is small, do it in two batches.
Step 4
4. Put a fine sieve or a piece of cheesecloth over a large jug. Pour the blended juice through it, pressing the pulp with the back of a spoon to squeeze out as much juice as you can. Throw the leftover pulp away. For a really smooth juice, pour it through the sieve again.

5. Have a taste. Add more water to make it lighter, a little honey if it’s not sweet enough, or more lemon if you want it sharper.

6. Pour it over plenty of ice, give it a stir, and enjoy it cold.
