Instructions

Step 1
Measure 3/4 cup (150 g) brown rice. Rinse it 2–3 times under running water until the water looks mostly clear.
Step 2
Place the rinsed rice in a bowl and add enough water to cover it by at least 2 inches. Soak for 3 hours. Drain the soaking water before cooking.
Step 3
Pour 3 cups (720 ml) fresh water into a medium saucepan and bring it to a rolling boil over high heat.
Step 4
Carefully add the soaked and drained rice to the boiling water. Stir once so the grains do not stick together.
Step 5
Reduce the heat to low, cover the pot with a lid and cook for about 35 minutes. Avoid opening the lid frequently.
Step 6
After 35 minutes, taste a few grains. They should be tender with a slight chew. If still hard, cook for another 5–10 minutes, adding a little hot water if needed.
Step 7
Switch off the heat. If any water remains, carefully strain it using a colander.
Step 8
Let the rice rest for 5 minutes, then gently fluff with a fork before serving. Serve warm with dal, curry or sabzi.
