Instructions

Step 1
Dry roast each ingredient separately over medium heat: pumpkin seeds for 2.5–4 minutes until they puff slightly; sunflower seeds for 2–3 minutes until lightly golden; flaxseeds for 1.5–2 minutes until they crackle; sesame seeds for 40–50 seconds; kalonji for 20–30 seconds. Do not roast chia seeds.
Step 2
Spread the roasted seeds on a plate and allow them to cool completely.
Step 3
Add the roasted seeds and the dry chia seeds to a mixer. Pulse until you get a slightly coarse powder. Do not over-grind.
Step 4
Grind the dates separately into a sticky paste. If the dates are dry, soak them in warm water for 8–10 minutes, drain well, then grind.
Step 5
Transfer the seed powder, date paste and cocoa powder to a large bowl. Knead thoroughly with clean hands for 2–3 minutes until the mixture holds together.
Step 6
If the mixture feels dry, knead in 2–3 extra dates. If it feels sticky, mix in a little more ground seed mixture.
Step 7
Divide the mixture into 20 equal portions and roll each portion into a firm laddoo about 22 g in weight.
Step 8
Store in an airtight container.
