½ cupnutritional yeast

1 Tbspfresh lime juice

Instructions
Prepare the vegetables
Step 1
Preheat the oven to 375°F (190°C). Heat a non-stick skillet over medium heat. Add the bell pepper, zucchini and garlic. Cook for 5–7 minutes until the vegetables have softened and most of the moisture has evaporated. Allow to cool for a few minutes.
Prepare the bean mixture

In a large bowl:
* Mash about half of the black beans with a fork or potato masher.
* Stir in the remaining whole beans.
* Add the cooked quinoa.
* Fold in the cooked vegetables and corn.
Make the binder

In a separate bowl, whisk together:
* Cottage cheese
* Cornstarch
* Nutritional yeast
* Lime juice
* All seasonings
