Instructions

Step 1
Rinse ice crystals off peppers, because if you don't it tastes like freezer and it's gross. Blot them dry with paper towels so they're not all soggy.
Step 2
Spread on foil lined baking sheet, spray or drizzle with oil. Can sprinkle with salt/pepper/garlic powder/seasoning of choice if desired, but it's not necessary.
Step 3
Bake peppers and onions at 400° F till the edges are browned. I don't know how long that is, I have ADHD and don't understand the passage of time.
Step 4
After the peppers & onions are in the oven, cook the ground beef and frozen onion together and season with the taco seasoning. The packet says to wait till it's cooked and add water and the seasoning, but I just dump it all in the pan and mix it up and it works itself out.
Step 5
While that is cooking, make the mac and cheese according to the directions on the box.

Chop the avocado and tomatoes
Step 7
Once the meat and mac and cheese are done, mix them together.
Step 8
Smell something burning, realize you forgot about the peppers and onions in the oven, yell, "oh shit!" and take out the slightly burnt peppers. Call them "roasted" because you're a chef now.
Step 9
Put the mac & cheese/ taco meat mix in bowls. Top with roasted peppers, tomatoes, avocados, shredded cheese, and a dollop of sour cream. Add hot sauce as desired.
