Instructions

Step 1
Pierce scrubbed potatoes all over with a fork; place on a large microwave-safe plate. Microwave on High until the potatoes are easily pierced with a fork, 15 to 20 minutes, carefully flipping with a fork or tongs every 5 minutes. (Alternatively, bake potatoes at 425°F until tender, 45 minutes to 1 hour.) Transfer to a clean cutting board and let cool slightly.
Step 2
Carefully slice potatoes lengthwise; do not cut all the way through. Pinch the ends to expose the flesh.
Step 3
Top the potatoes with 2 cups chicken, ½ cup salsa, the sliced avocado and ½ cup yogurt.
