Instructions

Step 1
Steam veggies in the microwave according to package Preheat the over to 350

Brown onion and meat
Step 3
Add black beans to the pan

Add everything to a bowl (mixed veggies and pan ingredients) And add 2 tbs of enchilada sauce

Coat the bottom of a rimmed baking sheet with one can of the enchilada sauce. (Assembly tray) In another baking dish, add the other can of enchilada sauce. (Baking tray)

Assembly time

Take one tortilla, place in enchilada sauced baking sheet. Flip it

On flipped side, add about 1/3c of mixture from the bowl to the tortilla

Roll it
Step 9
Place rolled tortilla inside of the baking dish.

Repeat for the rest of the tortillas

Baking

Step 11
Cover with shredded cheese
Step 12
Cover with foil and bake at 350 for 15 mins.
Step 13
Last mins take off the foil and allow cheese to brown
