Instructions
Step 1
Prepare the chicken. Finely mince or process the chicken breasts until they have a ground-chicken consistency.
Step 2
Add the 4 tablespoons flour, salt, pepper, garlic powder, and onion powder. Mix until everything is evenly combined.
Step 3
Form the chicken mixture into nugget shapes. Place them on a parchment-lined tray or plate.
Step 4
Freeze for 30 minutes. This firms them up so they won't fall apart when you batter them.
Step 5
While the nuggets chill, make the batter. Combine the ½ cup flour, cornstarch, salt, garlic powder, onion powder, pepper, baking powder, and baking soda.

Stir in the 2 beaten eggs and ⅔ cup ice-cold water until you have a smooth batter. Don't overmix.
Step 7
Heat about 1–2 inches of oil in a heavy skillet or pot to 350°F.

Remove the nuggets from the freezer. Dip each nugget completely into the batter, allowing a little excess to drip off.
Step 9
Carefully place the nuggets into the hot oil. Don't overcrowd the pan; cook them in batches.
Step 10
Fry until the coating is golden brown and the chicken reaches an internal temperature of 165°F.
Step 11
Transfer to a paper-towel-lined plate or wire rack and let them cool for a couple of minutes before serving.
