Carolina Reaper hot sauce is an intensely spicy roasted pepper sauce made with Carolina Reaper peppers, garlic, onion, distilled white vinegar, salt, and water.
Roasting the peppers and aromatics creates a deeper roasted flavor while maintaining the fruity character of Carolina Reaper peppers. The finished sauce has extreme heat, savory roasted notes, and a clean vinegar finish.
Carolina Reaper peppers average about 1,641,183 Scoville Heat Units (SHU), so this sauce is best used in small amounts. The recipe takes about 45 minutes and produces approximately 10 fl oz (300 ml) of smooth strained hot sauce.
Serve it with fried chicken, tacos, grilled meats, eggs, burgers, ramen, pho, noodle soups, and other savory dishes.

Instructions
Step 1

Roast the peppers, garlic, and onion: Preheat the oven to 400°F (204°C). Place Carolina Reaper peppers, halved white onion, and garlic bulb with the top cut off on a baking sheet. Roast for 15–20 minutes until peppers soften, develop lightly charred areas, and onion becomes tender. Cool for 5–10 minutes before handling.
Step 2

Blend the roasted ingredients: Transfer roasted Carolina Reaper peppers and onion to a blender or food processor. Squeeze roasted garlic cloves from their skins and add them to the peppers. Add distilled white vinegar and salt, then blend until the mixture becomes a thick pepper paste.
Step 3

Adjust the consistency: Add water and blend again until the sauce becomes smooth and pourable. Add additional water 1 tablespoon at a time if the sauce is too thick.
Step 4

Strain the sauce: Pour the blended sauce through a fine-mesh strainer and press gently to remove coarse skins and seeds. Leave some pulp if you prefer a thicker, rustic texture.
Step 5

Bottle the sauce: Transfer the strained sauce into clean glass hot sauce bottles or airtight jars. Allow the sauce to cool completely, seal the containers, and refrigerate.
