1. Preheat oven to 350°F.

2. Mix the gluten-free flour, coconut flour, baking powder, and salt.

3. In another bowl, whisk the melted butter, egg, monk fruit, and vanilla.

4. Combine the wet and dry ingredients. If the dough is too dry, add 1 tablespoon almond milk at a time until it forms a firm dough.

5. Roll the dough between two pieces of parchment paper to about ⅛-inch thick.

9. For extra crunch, turn the oven down to 300°F and bake another 5–8 minutes.
