Instructions

Step 1
In a small bowl, add the vanilla to the eggs and lightly break up the eggs. Set aside.
Step 2
In a large mixing bowl, use a wooden spoon to cream together the butter, brown sugar, and white sugar until well combined.

Do not use a hand mixer. Mixing by hand helps keep the cookies soft and gives them a different texture.
Step 4
Add the egg and vanilla mixture to the butter and sugar mixture. Stir until incorporated.
Step 5
Mix in the baking soda and plenty of cinnamon.
Step 6
Gradually add the flour, stirring until a soft dough forms.
Step 7
Fold in the chocolate chips.
Step 8
Scoop dough onto a prepared baking sheet, leaving space between cookies.
Step 9
Bake at 350°F (175°C) for approximately 9–11 minutes, or until the edges are lightly set and the centers still look slightly underdone.
Step 10
Slightly underbake the cookies: Pull them out before they look completely done.
Step 11
As soon as they come out of the oven, gently “smooch” the cookies inward with a spoon or spatula to make them round and slightly thicker.
Step 12
This allows the residual heat to finish cooking them while keeping the centers soft and chewy.
Step 13
Transfer the cookies to a cooling rack rather than leaving them on a flat surface. The airflow helps them cool more evenly and prevents the bottoms from continuing to bake.
