Instructions

Step 1
Grease a pan or put down foil and grease to save the clean up.Hasselback the chicken breasts, But do not cut all the way through.

Season the chicken breasts with cumin and paprika

The Popper Filling

Step 3
Chop up 2 small or one large jalapeño. Combine with desired ratio of bacon bits (real bacon), Mexican blend cheese and cream cheese. It should have a fairly solid consistency and be mold-able.
Step 4
Roll bits of the mixture into lengths and stuff the cuts of the chicken breast with the mixture. Do not overstuff, it will expand!

Top It Off

Step 5
Put Mexican cheese blend over the top, sprinkle on some extra bacon bits and top with another jalapeño sliced.

Step 6
Cook on 425 approximately 35 minutes or until top is crispy! I usually serve with Mexican rice and corn salsa blend (as seen in my photo)
