Ingredients

4 ozshrimp
peeled and deveined
2 ozspaghetti
or angel hair
kosher salt
1garlic clove
small, minced
1 Tbspextra-virgin olive oil
Scampi Sauce
Extra
2 Tbspunsalted butter
4 Tbspdry white wine
or chicken/vegetable broth
2 Tbspfresh lemon juice
¼ tspred pepper flakes
or to taste
1 Tbspfresh parsley
chopped
lemon zest
salt
to taste
2 Tbsppasta water
reserved, as needed
Instructions
Step 1
Cook the pasta.
Step 2
Bring a pot of salted water to a boil and cook the noodles until al dente. Before draining, reserve ½ cup of pasta water.

2. Season the shrimp.
Step 4
Pat the shrimp dry. Season lightly with salt and toss with about 1 tsp olive oil and half of the minced garlic. Let sit for about 10 minutes.

3. Cook the shrimp.
Step 6
Heat the remaining olive oil in a skillet over medium-high heat. Add the shrimp and cook for about 1–1½ minutes per side, until nearly cooked through. Transfer to a plate.

4. Make the extra sauce.
Step 8
Lower the heat to medium. Add the remaining garlic and red pepper flakes to the skillet and cook for about 30 seconds. Add the wine or broth and lemon juice. Simmer for 2–3 minutes, allowing the liquid to reduce slightly.

5. Add the butter.
Step 10
Stir in the butter until melted and the sauce becomes glossy.

6. Bring everything together.
Step 12
Add the cooked noodles and shrimp to the skillet. Toss well, adding 1 tbsp pasta water at a time until you have plenty of silky sauce coating the noodles.

7. Finish.
Step 14
Remove from heat and stir in the parsley and a little lemon zest. Taste and adjust the salt, lemon, or red pepper flakes.
